1st Course (Appetizer):

Cured & Smoked Red Deer Backstrap

Broken Arrow Ranch, Texas, with Extraterrestrial Fungi mushrooms, roasted heirloom carrots from sugar tree curated goods, braised garlic, pommes Maxim  (thin-sliced potato slow-cooked in clarified butter), chives, volcanic sea salt, and whipped beef bone marrow crème fraîche

Wine Pairing: Syrah, Holus Bolus
Notes of black pepper, plum, and blackberry

2nd Course:

Pan-Seared Chilean Sea Bass with Lemongrass and Kaffir Lime Leaf Risotto, garlic confit cherry tomatoes, balsamic reduction, parsley, and toasted hazelnut
