Appetizer: Benton’s Bacon and Leek Velouté - Silky leek and potato velouté infused with Benton’s bacon, poured tableside over smoked trout roe, crispy rye crumble, and leek ash. Brightened with micro chive blossoms and a drizzle of lemon oil.
Wine Pairing: Georges Duboeuf Domaine les Chenevières Macon-Villages 2017
Entree: Honey Lavender-Cured Duck Breast - Pan-seared honey-lavender cured duck breast, paired with vibrant carrot fluid gel, velvety mint-infused pea purée, and crispy wild mushroom arancetti. Finished with a lavender-honey jus and edible flowers.
Wine Pairing: Belle Glos 'Clark & Telephone' Pinot Noir 2022
Dessert: Deconstructed Poached Pear - Red wine-poached pear segments accompanied by whipped blue cheese mousse, honey-sweetened Inniskillin ice cream, and shards of house-made honeycomb candy. Accented with a rich red wine reduction and edible flowers.
